Guyanese refer to this as baigan. We usually usually roast this, remove the skin, add garlic seasoning etc and make something referred to as baigan choka. One of the most delicious meals with paratha roti similar to "buss up shot" but smaller. Visit any Guyanese owed roti shops in Richmond hill and request baigan choka with roti! I heard there is 100 plus ways to cook baigan.

We call this "Beregene" in Haiti we use it many ways but most common way is in Legume.

Choba Eggplant or Aubergine. I see some tomatoes in the photo too so shouldn't they be credited also?

Mum calls it Balanjay. We’re from The Essequibo. All of our family calls Eggplant and Tomatoes, Balanjay and Choka. I’m wondering if it’s called different things in different regions.
